Super Simple Cheese (goats) and Onion (red) Tart


I hope you are having a marvelous time. Well the weather is lovely and almost worthy of an impromptu picnic! But what to take! STAND back from the sandwiches and pre-prepared pasta salad gunk from the super market and instead go and grab yourself these ingredients (see photo) It should cost about £5!
This can be rustled u[ in 30mins and is the most delicious and impressive tart to take for lunch. You will need

Sineads Super Saturday/ Sunday Tart (Goats Cheese and Sweet Onion)
  • 1 Pack of ready rolled puff pastry
  • 1 large red onion halved and sliced finely
  • 1 pack of goats cheese 200g (I use Soignon )
  • Tablespoon of sugar
  • Big blob of butter
  • Pack of rocket (optional this one is just for colour)
Step 1 Pop your oven on to 200 degrees C. chop your onions up, melt the butter and sugar in a pan and add the onions in cook gently for 5-10mins until onions have softened and are more translucent. I often add about 2-3 tablespoons of water after the first minute or so to help them cook without needing so much butter!
Step 2 lay out your ready rolled pastry on a greased baking tray and score a diagnonal pattern over the centre of it this stops the middle puffing up too much. 
Step 3 Spoon your onions over the top. Slice your goats cheese and position/ throw over the tart liberally.

lunch is served!

Step 4 - Bake in the oven for 25mins

Step 5 Sprinkle the rocket over the top and get stuck in!
