Puy Lentil and Sausage Supper - a delicious monday treat


What to have on those “summer” evenings when the temperature drops and you want something a little more warming but not stodgy for dinner? Well here is my tip – grab yourself some lentils. High in protein, these little gems come in lovely colours and most do not need to be soaked before use, meaning they are great for quick suppers.

the ingredients
Lots of lovely fresh ingredients
1 pack of pork sausages
250gr puy (French) lentils
½ pint of vegetable stock
1 red onion, chopped
1 clove of garlic, crushes
1 red pepper, sliced
1 green pepper, sliced
1 stem of celery (only if you’ve got some spare), chopped
125mls red wine (optional)

1)   Brown your sausages in a non-stick pan, and when they have a good colour remove them form the pan and set aside.
2)  Into the same pan add your onions, garlic, celery and peppers, cook for 5-10mins until softened.
3)  Now its lentil time – add your lentils to the pan and sausages (I chop mine up but again its optional!) and give it a good thorough mix
4)  Add your vegetable stock and wine, pop a lid on and simmer for 20mins or until the lentils are tender
5)  Serve with crusty bread (a day old baguette is perfect) or a little potato salad
